“Kelly’s Cape Bop” was created from a mother’s wish to offer her daughter a more nutritious and delicious version of the traditional Korean Kimbop (Korean traditional dish of rice and meat/vegetables wrapped in seaweed). Kelly, the daughter in question had difficulty eating vegetables as a child, and to help with that, Una (the mother and shop owner) decided to create a Kimbop that contained less carbohydrates (rice), and more vegetables instead. As a result the Kimbop is a lot more colourful and bigger than the original. 

The pop up will feature (Kelly’s Cape) Kimbop as their signature dish, available in six different flavours of beef, pork, tuna, veggie, cheese and spicy squid. But other dishes such as their Korean Egg Rolls (omelette), Tteokbokki (spicy rice cakes) and Garlic Chicken Bites will also be available. Especially notable is their new launch of “Kimbop without Rice”, a dish that substitutes rice with egg floss made from local farm fresh eggs. A healthier alternative for those who aim to reduce their carb intake and up-up-up their fibre.
