Australian chef duo host one-night dinner collab at Arcane

On 17 April, Arcane’s Shane Osborn is teaming up with fellow Australian chef Mark Best, of Bistro by Mark Best, for a one-night only dinner.

It’s a collaboration between two accomplished, award-winning figureheads in Australia’s culinary world: Osborn is the first Australian head chef to lead a restaurant to Michelin-star status - at the age of 29 - and while heading up London's Pied à Terre, of which he was a part owner, earned the restaurant international acclaim. Best is the former executive chef and owner of Marque restaurant in Sydney; like Osborn, Best has received accolades both in Australia and abroad, and today he helms Bistro by Mark Best on the Genting Dream, the debut ship of Dream Cruises.

The one-night only collaboration features a seven-course dinner of ebisu oyster with urchin and grilled sea foam, duck liver crostino with green chili, scampi rending and pineapple salad, drunken squab, braised abalone and morel, Wagyu cheek, beetroot oil and black truffle; Milo tart with native hibiscus and parsnip Cornetto. Each dish will be paired with a wine by Penfolds.
