It's getting pretty hot lately. Beat the heat in June with some of these new summer cocktails from our favourite sipper spots. 

Beverly Hills Copper @Ham & Sherry
Need a drink but don’t wanna overwork your liver? Intox while you detox this summer with Ham & Sherry's Beverly Hills Copper. Combining apple, celery, ginger, lime and Absolut Elyx Sipping vodka, the cocktail will leave you feeling light and refreshed. Pandan Grasshopper @Lily and Bloom
Cocktail lover? History Buff? You’re in luck. Prized Mixologist John Nugent recently launched a new series of classic cocktails, recreating historical recipes with a little extra innovation. We recommend the icy Pandan Grasshopper, a boozy summer breeze to save you from the heat. The creamy mint cocktail adds a twist to the mid-century recipe (originated from New Orleans), mixing in inhouse pandan extract and coconut milk, plus a shot of Branca Menta peppermint goodness. 5-6/F, LKF Tower, 33 Wyndham Street, Central, 2810-6166; lily-bloom.com

Salt Marsh Martini @Seafood room
Nothing better than a refreshing sipper while baking under the scorching Hong Kong sun-- especially true if you’re sky high in Seafood Room’s rooftop bar. Seafood Room’s got a new cocktail, and knowing their head mixologist Alex Chatte, it's anything but ordinary. It’s made with something you most likely won’t be able to guess: seaweed. Yes, the green things sushi is wrapped with. The new Salt Marsh Martini is a unique concoction of seaweed, milk-distilled vodka, nori (seaweed) water, Lactalium vodka and vanilla sugar. It’s a lot sweeter than it sounds and worth the adventure. But if it’s not your cup of tea you can always opt for their signature Mangrove Colada, their take on the classic pineapple and coconut sipper, which in our opinion, might be one of the best Pina Colada(s) out there. 26/F, Tower 535, 535 Jaffe Rd, Causeway Bay, 3708 9668; seafoodroom.h

Citrus Quartet @BAR DE LUXE
Japanese style cocktail bar Bar De Luxe is introducing four new citrusy & zesty cocktails to try. Along with the summery classics (their mojito and their pina colada), they’re also offering the Fresh Mango Cocktail served with slices of mango, mango juice and gold rum. It’s a cocktail version of Hong Kong’s favourite summertime dessert.
