Purple Bites: what's making them purple?

Second part of our #Bites series… Purple Bites! We found our favourite purple-coloured bites in Hong Kong, and we have it on video.

So here’s a rundown on what you saw on the video. What’s in these lovely dishes? And most importantly, what’s making them purple?

Acai yoghurt bowl  @Elephant Grounds
What makes this acai yoghurt bowl purple is the blueberry yoghurt! Along with it, it comes with granola, banana, strawberry, blueberry, toasted almonds and coconut flakes. Swedish blueberry ice cream @Frantzen's Kitchen 
The Swedish blueberry ice cream is purple because of… yes, obviously, blueberries. The Swedish Blueberry ice cream features exclusive ‘bilberries’ from Sweden that are bigger than most blueberries we know of. Lavender ice cream @I Cremeria
We just can’t have enough of things that taste like flowers. Something about it makes one feel royal or maybe there’s something romantic about eating something that can also be part of a bouquet. Of course following the name, lavender ice cream is light purple because of the all-natural lavender petals that flavour the cream. It’s a seasonal flavour so grab it when you can! El pollo loco fried chicken samich @Okra
This fried chicken burger (or sammich or samich or sandwich) has a purple bun made with Okinawan sweet potatoes that are bright purple in colour. A whole, marinated, deep-fried & super-tender chicken thigh is placed on a swirl of mayonnaise, along with a bundle of fresh cabbage and their special crystal hot sauce.
