Everything that is good about Peruvian food
Peruvian food is massively popular right now, and for good reason. It’s based on rich tradition, yet innovative and not stifled by orthodoxy. And it is refined while being casual and unfussy. Ichu, just opened ay H Queens, demonstrates all of these attributes in abundance.
Ichu Peru’s cocktail menu features plenty of instagram-friendly concoctions with dry-ice and fancy garnishes. But their take on the simple, classic Pisco sour sums up the whole experience for us. It stays close enough to the original recipe to satisfy purists, but the use of saffron-infused Pisco and a little corn syrup turn this classic cocktail into something new.
Speaking of corn, it does seem that about 80% of the dishes on the menu, from cerviches to desserts, feature maize in some capacity. It would be a bit repetitive if it weren’t for the incredible variety elsewhere on the menu.
The real surprise at Ichu, is the desserts. We would seriously consider coming here just for the desserts; big sweet bowls of cacao, coconut, fruits and, inevitably, more maize. It just reminds of of everything that is great about Peruvian cuisine.
