Where to get your white truffle fix this season
29 Oct 2018
Zuma Hong Kong is presenting their annual truffle tasting menu, available from Friday 26th October until the end of this year. The 12-course meal includes seared toro with caviar and white truffle, Japanese oyster with purple shiso tapioca, a spicy lobster soup with shrimps, shimeji mushrooms to add a kick of warmth, a wagyu tartare served with a miso brioch etc. These are just a handful of dishes out of the whole menu and it has already got us counting down the days till we go. The menu at Paper Moon is sure to contain the most delicious flavors as the white truffles are brought from Savigno, and if we know anything about that place it's that it has the perfect conditions for the white truffles to grow. The chef has created a series to highlight this aromatic (and super delicious) ingredient. Dishes including Robiola cheese fondue with cornmeal cake & duck egg, roasted veal piedmont style, white chocolate pannacotta with almond sauce, and many more will be shaved with truffle flakes right before being served to preserve the best aromatic condition (talk about heaven on every plate). Christmas isn't the only the reason we look forward to the holiday season because this month bring to TOWN the highly anticipated Alba white truffle. This so-called “diamond of the kitchen” will be the inspiration behind the dishes being presented for the new tasting menu. The must-have dish for the night will have to be the Tagliolini with Alba truffle which is guaranteed to make your mouth water.

Points to Angelini for one of the prettiest well-sculpted white truffle dishes this season, from the 15th of October until the 5th of November, Angelini has a special white truffle menu (prepared by the heavens if we might add). Their line of dishes includes the classic risotto with butter, parmesan cheese and white Alba truffle topped with 5 grams of shredded white truffle! That’s a lot of truffles, but we aren't complaining the slightest. The chefs have also included a vanilla ice-cream with English cream and white Alba truffle on the menu. What else could we ask for?

The DiVino Group is set to fulfill our truffle dreams this season. The white truffles will be the hero of their menu or lack thereof. They have kept a ‘No Menu, No Limitations, No Rules’ attitude to give to us the best truffle dishes. Each restaurant offers three chef’s suggestions to what the customers’ appetites. Fresh egg tagliatelle and risotto are on standby as the most popular pairing for truffles but diners are encouraged to give in to their adventurous side, and experiment. 73 Wyndham Street, Central; 2167 8883; divinogroup.com
