Boundaryless dining with Chef Kihachi Kumagai

Cafe Landmark's "boundaryless dinner" tasting menu has been designed by guest chef, Kihachi Kumagai. With French culinary training, Chef Kihachi Kumagai’s cooking style was conceived when he was in Taiwan. Back then, sourcing French ingredients, such as cream, was a challenge, so he was forced to find alternatives without compromising the original spirit of the recipes. For the experience at Cafe Landmark, Kumagai has designed the menu using imported Japanese and Chinese ingredients.

Highlights include Chef’s Seared Maguro Salad with seared Japanese tuna sashimi on a chicory, endive, tomato, asparagus and okra salad, dressed with Japanese miso burdock root and smoked radish ravigote sauce and a touch of Japanese dried plum sauce; and Grilled Beef Mignon with X.O. sauce, saga wagyu cooked with a lightly sautéed x.o sauce with garlic, ginger, green onion and oil, meat broth, Chinese rice wine and oyster sauce, and served with a side of ebi-imo taro and coriander.
