Belon relocates and introduces Chef Matthew Kirkley as the new head chef

Some breaking news this week: Head chef Daniel Calvert of BELON (#4 Asia’s 50 Best Restaurants), a member of the Black Sheep stable has just announced his recent departure from the well-renowned Soho dining destination. Leading the kitchen would be new head chef Matthew Kirkley whose impressive CV includes stints at two-Michelin-starred L20 in Chicago and one-Michelin starred COI in San Francisco.
“My time in Hong Kong and with BELON has been the most rewarding of my career. I am delighted to be passing the baton to a chef of Chef Kirkley’s calibre as I begin a new chapter beyond Hong Kong,” optimistically remarked by chef Calvert.

Elsewhere, the neo-Parisian bistro will be closing its doors this October and move to a brand new location in Soho. According to an official statement from Black Sheep, the acclaimed Joyce Wang Studio by the well-renowned Joyce Wang has been appointed to bring the vision to life. Diners are to expect a more “modern, refined and mature aesthetic”.
