One to try: Rosewood Hong Kong’s The Legacy House

The story: Situated at the prestigious Rosewood Hong Kong in TST is The Legacy House which features sought-after classic Cantonese cuisine. From 29 September, the team at The Legacy House led executive chef Li Chi Wai, presents an impressive selection of 17 modern, reimagined dim sum recipes made with premium ingredients.

The vibe: Overlooking Victoria Dockside and the incomparable views of the Hong Kong skyline, the restaurant boasts a polished, and elegantly designed main dining room and seven private ones.

On the menu: The dim sum lunch menu (HK$480 per person) sees well-presented and carefully crafted dumplings housed in classic bamboo steamers. Unsurprisingly a winner, the black truffle-topped vegetable dumplings could not be better balanced thus creating a unique flavour profile. The fish dumplings with fungus and tangerine peel and the Matsuba crab meat dumpling with kale also showcases a wide array of textures new to the dim sum scene. To further bring out the flavours (and the heat!), pair the dumplings with some XO sauce!

Elsewhere, the Chef- Recommended Roast Goose (HK$ 280/regular, HK$450/half) in the shape of a classic pipa string instrument is an absolute must-try (duh, of course!). Marinated in the chef’s house made secret sauce, the bird was cooked to perfection: audibly crispy on the outside and sinfully juicy on the inside. And the artsy presentation evokes a sense of nostalgia and the feeling of home.

The classic stir-fried fish noodle with dried sole fish, bean sprout and mushroom was also something to look forward to. Made fresh everyday, the noodles were bouncy and chewy plus its flavour is light and does not overpower the gems from the sea.

What else: The Legacy House is helmed by chef Li Chi Wai who has amassed over two cades of culinary experience at some of the most highly-acclaimed restaurants at Macau MGM and MGM Cotai, amongst others. At the restaurant, diners can experience Li’s mastery in Cantonse fare while discovering a whole new level of appreciation.
